I'm Home

I'm here, so I might as well blog !!! Right ? The trip to Minersvile, Utah has been cancelled until further notice or unless it warms up a bit .

I have a good recipe for Egg Drop soup with chicken and noddles .

Ingredients

4 cups chicken broth
3 tablespoon soy sauce
3 garlic cloves smashed
1 1/2 teaspoons ground ginger
4 ounces rice noodles
2 tablespoons cornstarch
2 eggs lightly beaten
1 1/2 cups cooked shredded chicken
2 scallions thinly sliced

Direction:

1. Bring the broth ,1 1/2 cups water, soy sauce, garlic and ginger to a boil. Reduce to medium and cook broth mixture for 10 minutes

2. Remove the garlic cloves with a slotted spoon and add noddles to pot;cook for 4 minutes or until tender

3. Meanwhile, stir together the cornstarch and 2 tablespoons water in a small bowl;whisk into broth and cook for 1 minute or until thickened.

4.Stir the soup so it is moving in a circular direction. Pour in the beaten eggs in a slow, steady stream. Stir in chicken and garnish with scallions.

Not leaving today !!

We have decided not to leave today.... The wind is a blowing and it's a bit chilly.

So we will wait until tomorrow and see what it will bring. That's the great thing about being retired, you don't have to live by a schedule. !!!

Minnersville

We are going on a short trip maybe just a few days. We are going to Minnersville Utah, it's a little cooler up there so maybe we will see some fall color changes.
We are going Bass fishing, so I will let you know how that turns out. I will share pictures when we get back.

Easy Newborn Hat

For years my mother-in-law tried to teach me to knit and crochet. Well........I kind of got it , but I am a real beginner.

I found this pattern and I think I might even be able to achieve this one .

This pattern will fit newborn to 3 months.

Materials:

Knitting worsted yarn
Knitting needles size 8mm (US11)
Darning needle

Instructions:

Working with 2 strands of yarn, as though they were one, cast on 14 stitches . Knit across the row.

Knit across every row, until the rectangle measures 12 inches long.

Cast off, leaving a long yarn end

Thread the yarn end into a darning needle

Fold the rectangle in half,and sew up to form a tube. Secure at the corner with a few stitches, then weave the darning needle through one open end of the hat to form the top. Gather tightly, and take a few stitches to secure.

Sound easy ?

Four Cheese Baked Pasta

If you love pasta as I do , you will love this!!

Ingredients:

1 pound rotini pasta or penne
3/4 pound hot Italian sausage
2 sweet red peppers
1 large onion
1 tablespoon olive oil
1 jar 26 ounces marinara sauce (home made would be nice here )
2 cups shredded Italian four cheese blend

Directions:

1. Heat oven to 450. Cook pasta and drain

2. While pasta is cooking, cut sausage into 1/2 inch slices. Seed and slice peppers and slice onion for a total of 4 cups. Heat olive oil in a large ovenproof skillet over medium high heat.Add sausage,peppers,and onions. Cook 10 minutes stirring occasionally, until peppers and onions are tender and the sausage is cooked through. Add sauce and bring to a simmer. Stir in the drained pasta and 1 cup of the cheese.

3. Sprinkle remaining cheese over the pasta and bake at 450 for 8 minutes or until cheese melts and casserole starts to bubble. Cool 5 minutes before serving.

Wooden Shutter Organizer

Wooden shutters can be just as functional and good looking indoors as out. This refinished trio hangs on the wall over a hallway console. Their louvers are a perfect spot to tuck invitations,display artwork,or hang messages .

Wooden shutters come in a variety of shapes and sizes. If using multiples you will want to match them in size and style.

If shutters have adjustable louvers, lock them in the "up" position by driving a brad through the tilt bar and into the frame.

Drill pilot holes in shutter and the wall, mount with hardware . Repeat with side panels. butting them snugly against middle shutter.
