Slow Cooker Mexican Beef Stew

Need a change from classic beef stew? Go Mexican with this easy to make flavor packed version that goes together in minutes

Ingredients

2 lb. beef stew meat
1 can diced tomatoes undrained
1 cup small white onions
1 teaspoon chili powder
1 package taco seasoning
1 can black beans drained and rinsed
1 can Mexicorn drain

Directions:

Mix beef, tomatoes,onions, and chili power in a 4 quart slow cooker

Cover and cook on low for 9 hours or until beef is tender

Stir in taco seasoning mix,using wire whisk. Stir in black beans and corn. Cover and cook on high for 15-30 minutes or until thickened.
