Quick Fix Dinners -Stuffed Spuds

I am going to try this one, it's easy and quick. What you'll need :

4 large baking potatoes
12 oz beef flat iron steak
1 tbsp oil
8 oz sliced fresh mushrooms
2 cup broccoli florets
1/2 cup bottled stir fry sauce with ginger
Sliced red sweet peppers

How to

Arrange potatoes in a microwave safe dish. Microcook , uncovered on 100 percent for 7 minutes. Turn potatoes; cook 8 minutes more Let potatoes rest in microwave

Meanwhile slice steak in thin strips,slicing crosswise against grain. In a skillet heat oil, add steak and stir for 2 minutes. Add mushrooms and broccoli;cook and stir 5 minutes. Add stir fry sauce;stir to coat. Cook uncovered 1 minute or until heated through

Carefully remove potatoes, cut lengthwise slit in top of each. Squeeze potato ends to open. Top potatoes with stir fry mixture Drizzle any remaining sauce .
