Baked Creamed Potatoes

These creamy, cheesy baked potatoes are the perfect side dish. Serve this as part of a weeknight meal or impress your guests on Thanksgiving with a new take on potatoes.


2 pounds potatoes
1 cup mayonnaise
1/2 cup sour cream
1/4 cup milk
2 eggs
2 teaspoon mustard
Salt and pepper to taste
2 tablespoon parsley chopped
1/2 cup grated cheese
1/4 cup Parmesan cheese grated


1 Peel and chop potatoes, cook in boiling salted water until tender,drain well. Mash until smooth,mix with mayonnaise, sour cream, milk, lightly beaten eggs, mustard, and parsley:season with salt and pepper

2. Press mixture though a sieve,spoon mixture evenly into a greased casserole dish. Sprinkle with grated cheeses.

3 Bake in a moderate oven for 20 minutes or until golden on top
