Chicken and Cheddar Croquettes

This is a southern dish, that I have not tried yet but it sounds really yummy. This recipe calls for frying the croquettes but you can bake them on a baking sheet at 350 for 30 minutes.

Ingredients:

3 cups of leftover cooked chicken finely chopped or shredded
2 cups dry breadcrumbs Italian seasoned
3 eggs lightly beaten
1 cup onion finely chopped
1 tablespoon parsley
2 gloves garlic
1/2 cup cheddar cheese finely grated
1 teaspoon lemon zest
1/2 teaspoon sea salt
1 teaspoon freshly ground pepper
olive oil for frying
chicken broth (optional for moistening )

Directions:

1. In a small skillet , saute the chopped onion and garlic in a small amount of olive oil until soft and set aside

2. In a large bowl, combine chicken,breadcrumbs,cheese and 3 eggs, mixing well. Test mixture to make sure it can be formed into patties. If it seems dry, add another egg or a bit of chicken broth.

3. Add parsley,onion ,garlic, lemon zest, salt and pepper to the bowl and mix together well.

4.Heat 2 tablespoons of olive oil on medium in a large skillet. Form mixture into small patties or balls and fry until golden brown. Remove and set on paper towel to drain.

Easy enough, right?
