Roasted Pumpkin Seeds

This is one of my favorites. I love pumpkin seeds. They are a must on our camping trips.

You will need:

2 cups raw seeds
2 teaspoon salt
water to cover

This recipe calls for soaking in salt water before roasting. The soaking creates steam while they are roasting .

1. Place seeds in shallow bowl , add enough water so the top layer of seeds is floating.

2.Add salt and stir well to dissolve

3.Let stand for 1/2 hour. The seeds will begin to soak up the water and turn darker because of this. When that happens,they are ready to roast.

4.Pour seeds into a stainer and drain as much as possible.

5.Put seeds on a cookie sheet covered with parchment paper and spread into a single layer

6. Bake at 350 degrees for 20-30 minutes

7. Cool completely and store in an airtight container
