Loaded Baked Potato Soup

I went to lunch the other day with my friend Celeste. We had soup and bread stick for lunch, and we were saying how we are really ready for some homemade soup. So Celeste, this one is for you!!

Ingredients:

1 pound baking potatoes cubed
1 can low sodium chicken broth
1 cup milk
3 slices bacon cooked, crumbles and divided
1 cup Shredded Cheddar cheese
1 green onion sliced
1/4 cup sour cream

Make It"

Microwave potatoes in a large bowl on high for 5 minutes stirring after 2 1/2 minutes. Stir in broth and milk. Microwave 10 minutes stirring after 5 min. Carefully crush potatoes with potato masher.

Reserve 2 tbsp each bacon and cheese and 1 tbsp onions for topping. Stir remaining bacon,cheese and onions into soup.

Serve topped with bacon cheese onions and sour cream .
