Easy Cobb Salad




Here is another summer recipe . This recipe calls for boiling your chicken breast, personally I would prefer my chicken cooked in a different way. Something about boiled chicken that does not sound appetizing .

What I suggest is the next time you BBQ chicken, make any extra couple of pieces, let cool and freeze. Then when you need it, it's already cooked and all you have to do it cube it up. This is what we do and it has worked out real well.


Ingredients:

1 pound boneless ,skinless chicken breast

8 cups of salad green

2 tomatoes cut into 1/2 inch pieces

1/4 cup light red wine vinaigrette

3 slices cooked bacon,crumbled

1/4 cup crumbled blue cheese

3 hard cooked eggs

Directions :

1. Heat a large pot of water to simmering. Add chicken ,cover and cook 18 minuted or until cooked through. Cool and cut into 1/2 inch cubes.

2. To serve, place chicken, greens and tomatoes in a large serving bowl and our vinaigrette over top: toss to combine. Sprinkle each serving with equal amounts bacon,blue cheese,and eggs.
