Here's a yummy side dish to go with your ribs!!
8 oz elbow macaroni 2 cups
1/2 # green beans trimmed and cut into 1 inch pieces
1/3 cup lemon juice
1 tbsp Dijon mustard
1 tsp salt
1/4 tsp black pepper
1/3 cup olive oil
1/3 cup plain yogurt or sour cream
8 oz cubed cheddar cheese
1 cup spinach leaves
1 large tomato seeded and chopped
1/2 cup green onions
1 tbsp fresh tarragon
1. Cook macaroni , add green beans during the last 5 minutes of cooking Drain and rinse in cold water.
2. For dressing, in a bowl whisk together lemon juice,salt and pepper. Whisk in olive oil until thickened. Whisk in yogurt.
3. Add cheese, spinach, tomato, onions and tarragon to macaroni. Add dressing, toss and serve immediately.
