Beef Short Ribs with Vegetables

Now this brings back memories. When I was a kid ( many years ago ) my mother would make these for a Sunday dinner. I can remember the taste and the smell .

The ingredient list may be a bit daunting, but when you see the how easy this recipe is , you will want to try this one

Ingredients:

3 1/2 pounds beef short ribs
1 tablespoon vegetable oil
1 large onion cut into wedges
1 cup water
1 cup tomato ketchup
1/3 cup red wine vinegar
1 tablespoon paprika
1 teaspoon curry powder
1/2 teaspoon chili powder
1/2 teaspoon dry mustard
2 teaspoon salt
4 medium potatoes peeled
4 medium carrots cubed
1 tablespoon cornstarch
1/4 cup water

Instructions:

Mix all ingredients and cook on low for 6-8 hours. I would think that you could do these in a crock pot .
