Roasted Garlic Mashed Potatoes

Now you can improve comforting mashed potatoes. Flavor them with mellow roasted garlic and spring onions.


6 cloves garlic unpeeled
1 tablespoon oil
1 1/2 pounds potatoes
2 tablespoons chopped spring onions
2 oz margarine or butter
4 oz light cream or milk
Salt and Pepper to taste

Place unpeeled garlic in a baking dish , pour oil over garlic and toss to coat. Cover with foil and bake in a preheated 400 oven for about 25 minutes or until tender. Remove and cool.

Meanwhile prepare your potatoes and cook until tender and drain.

Squeeze garlic to extract the cloves. In a large bowl,combine the potatoes,garlic, onion ,margarine or butter, light cream or milk,salt and pepper. Beat with electric mixer to mash lightly. Serve hot.
