Banana Crunch Muffins

This recipe is from scratch, but well worth the effort. Great for a quick breakfast or add chocolate chips for a satisfying dessert.

Ingredients:

1 cup whole wheat flour
3/4 cup all purpose flour
1 cup wheat bran
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 eggs
2/3 cup packed light brown sugar
1 cup mashed bananas
1 cup buttermilk
1/4 cup canola oil
1 1/2 teaspoons vanilla extract
1 1/2 cup chocolate chips (optional)
1 cup granola

Step 1 Heat oven to 400 Grease the bottoms only of 12 standard muffin cups

Step 2 In a large bowl, whisk together both flours and the bran, baking powder, baking soda, cinnamon and salt. In a medium bowl, whisk together the eggs, brown sugar, bananas, buttermilk,oil and vanilla extract.Add the egg mixture to the dry ingredients and stir just until batter is blended.

Step 3 Divide the batter among the muffins cups and sprinkle the tops with the granola. Bake for 15 minutes. Let cool for 5 to 10 minutes.
