Start to finish 19 minutes !! What a great idea for a Spring dinner
You need
1- 17 oz pkg refrigerated cooked beef roast au jus
1 lb small red potatoes
3 medium carrots
1 tablespoon cooking oil
Freshly ground pepper
3 tablespoons chopped fresh parsley
3-6 cloves garlic minced
1 tablespoon shredded lemon zest
How to
Large skillet cook beef roast for 10 minutes. Uncover and simmer for 5 minutes more, until juices are slightly reduced. Quarter the potatoes Peel and slice carrots in 3.4 inch pieces. Place vegetables in microwave ,drizzle with cooking oil and sprinkle pepper;toss to coat, Cover and cook on high for 10 minutes or until tender
For herb garden mixture,combine parsley,garlic and lemon peel, Stir vegetables into skillet with beef and juices. Divide among serving dishes. Sprinkle with herb garlic mixture
